Easy Black Bean Soup

A lovely, heart warming simple and easy black bean soup , perfect for a cold weather. This dish can be served with any meal, particularly for a healthy lunch, can be enjoyed with bread or on its own, perfect for vegan or vegetarians.


Ingredients:

  • 3 cups Water
  • 2 cans Black Beans
  • 2 Stalks celery, chopped
  • 1 Onion, chopped
  • 1 tbsp Olive oil
  • 2 Cloves Garlic
  • 1 tbsp Fresh Ginger, chopped fine
  • Black pepper to taste
Directions:

 

  1. Heat oil in skillet. Sauté onion until tender (5 min?).
  2. Add Celery, garlic, ginger — cook 1-2 mins more to release flavors.
  3. Add everything else and simmer for 30 mins or so to mix flavors and thicken a little.

 

Prep time: 15-20 mins
