Easy Black Bean Soup
A lovely, heart warming simple and easy black bean soup , perfect for a cold weather. This dish can be served with any meal, particularly for a healthy lunch, can be enjoyed with bread or on its own, perfect for vegan or vegetarians.
Ingredients:
- 3 cups Water
- 2 cans Black Beans
- 2 Stalks celery, chopped
- 1 Onion, chopped
- 1 tbsp Olive oil
- 2 Cloves Garlic
- 1 tbsp Fresh Ginger, chopped fine
- Black pepper to taste
Directions:
- Heat oil in skillet. Sauté onion until tender (5 min?).
- Add Celery, garlic, ginger — cook 1-2 mins more to release flavors.
- Add everything else and simmer for 30 mins or so to mix flavors and thicken a little.
Prep time: 15-20 mins
