Lentil Barley Soup

 

A lovely and heart warming lentil barley soup, perfect for a cold weather. This dish can be served with any meal, particularly for a healthy lunch, can be enjoyed with bread or on its own, very filling. Perfect for vegetarians and vegans.


Ingredients:

 

  • 1/4 c. margarine
  • 3/4 c. chopped celery
  • 3/4 c. chopped onion
  • 6 c. water
  • 3/4 c. red lentils
  • 1 qt. tomatoes
  • 1/2 tsp. garlic salt
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 c. barley or brown rice
  • 1/2 tsp. rosemary
  • 1/2 cup shredded carrots

 

Direction:

  1. Make Saute in large stewing pan from margarine, celery, and onion.
  2. Than add water and lentils.
  3. Cook for 20 minutes. than add 1 qt. tomatoes
  4. Now add the rest of the ingredients and simmer 45-60 minutes.
  5. Add 1/2 cup shredded carrots. Cook 5 minutes more and you are done.

Serves 6.

Prep time 15-25 mins.
